Does the term "whiteness theory" really describe the essence of the real issues involving privilege, power, and hegemony in a global society? Does it essentialize the theory into superficial issues of skin color rather than matters of institutional practices and cultural identity development?

I agree. As I see it, the issues have changed from skin color to class and socioeconomics.
